Spaghetti alla Carrettiera (Spaghetti with Ricotta, Tomato and Basil)
This recipe was my favorite summertime recipe at my mom’s house. My Aunt Jo lived with us. She would often make this dish during those hot summer months when fresh basil and tomatoes were picked from my dad’s garden. Today, the restaurants call it “Farm to Table”. I guess our Italian ancestors were ahead of there time!!! We just called it what it was, a light, fresh summer meal. Go figure. Ricotta Cookies
I remember my Aunt Josie making these cookies every spring because of their light texture. She loved visiting with friends every Sunday. They would take turns visiting one another in the afternoons sharing their desserts with coffee. Pasta Ca Muddica
During our Catholic Lenten fast growing up, Fridays and Wednesdays were always meat free. My home is still meatless every Friday. One of our favorite meals continuing through today, is Pasta Ca Muddica/ Pasta with Breadcrumbs. Its name comes from the breadcrumbs being used, muddica, meaning crumb in Sicilian dialect.
