Seared Pound Cake with Strawberries & Amaretto Orange Glaze

An excellent recipe in winter as well as summer, I suggest pairing it with a very good vanilla ice cream!

Serves 18
18 Tablespoons Butter
18 Tablespoons Orange Marmalade 1 Cup Brown Sugar, packed
18 Strawberries, fanned but not capped 18 Strawberries, Sliced
1/2 Cup Amaretto Liquor
18 Slices Pound Cake, ½ " Thick 9 Fluid Ounces Avocado Oil
In sauté pan place butter and melt completely and add orange marmalade and bring to a boil. PLEASE BE VERY CAREFUL THIS CAN BE DANGEROUS!! Add brown sugar and flame with Amaretto liquor. Tilt pan and flame from the open flame from your gas stove. If you do not have a gas stove use a long nozzle lighter and ignite to flame!!! BE VERY CAREFUL! Mix and hold warm.
Add sliced strawberries into marmalade, butter, brown sugar mixture. Please stir immediately.
Into another sauté pan add avocado oil and heat for just ten seconds and place pound cake cut side down and sear for about thirty seconds until golden brown and turn over and sear other side until golden brown. Remove from heat and hold warm.
Place seared pound cake on dessert plate and pour strawberry glaze over pound cake and place a fanned strawberry on one corner that does not have sauce on it, of the cake and serve immediately with or without ice cream on the side.
